Andiamo! 'NAMO! - Welcome to Italian cuisine

07/04/2016

'NAMO Restaurant brings to diners in Ho Chi Minh City a vivid experience of the art of pizza in the typical Neapolitan style of Italy. In the steps of making this pure Neapolitan style pizza, the dough is the decisive factor, as the dough must be fermented perfectly to ensure the creation of a pie with a crispy and delicious crust. Made from the world's finest Italian ingredients, then baked in a very special handmade oven, pizza at 'NAMO is the most authentic pizza.

The 'NAMO story began with a trip to beautiful Italy, where all the secrets to making the best pizza in the world are kept. After many days of traveling around, tasting each special type of pizza from each region, we gradually discovered the “recipe” for a perfect pizza – it is in the farms and kitchens of Naples, and in conversations with the people who make it: the flour millers of Caputo 00, the buffalo farmers who produce mozzarella, and the tomato growers and winemakers of San Marzano. This trip was the beginning of our deep love for the art of pizza making, and it is this passion that “lights the fire” in the kitchen of the 'NAMO restaurant today.

Not only do we have the best specialty ingredients, 'NAMO also invites pizza masters (pizzaioli), experienced people who grew up in families with a tradition of making pizza for generations, came to Saigon. The artisanspizzaioliThe Neapolitan Italians at 'NAMO are true pizza masters and members of the world's most prestigious pizza organization: the Union of Traditional Pizza Restaurants (UPTER). Having learned to make pizza from a young age in their mother's kitchen, few people understand how to make a delicious pizza as well as they do.

In addition to pizza, the restaurant's menu features other traditional Italian dishes, including a variety of handmade pastas, and delicious main courses and desserts. These dishes are designed by renowned Italian chef and head chef Ivan Barone, whose squid ink crab tagliolini has quickly become one of the signature dishes at 'NAMO. Ivan's other signature dishes, such as veal fettucine and chicken diavola, are inspired by his grandmother's recipes.

Ivan joined 'NAMO after a long career in some of the world's top 5-star hotels and his own prestigious restaurant in Tuscany. With a love of learning and exploring, Ivan has now made his way to Asia, where he will continue to bring the flavors of his childhood to diners who visit 'NAMO'.

It’s not just chefs who have their own “heritage”. Every ingredient on the menu at ‘NAMO has been carefully selected for its quality and unparalleled deliciousness, from the sweet tomatoes grown in the valleys of Mount Vesuvius, the sausages'ndujaCalabrian's famous, milky white mozzarella cheeseFior di latteFor wine connoisseurs, 'NAMO offers a comprehensive Italian wine menu, including the finest Super Tuscans and exceptional organic wines.

Beyond the exquisite dishes, 'NAMO has created a culinary experience that is characterized by the generous, hospitable style of the Italian people through the service at the restaurant. The staff at 'NAMO all share a passion for Italian cuisine, and are always ready to answer any requests or questions from diners about the menu or about the ingredients here.

The restaurant's stunning four-story space was designed by a group of renowned architects, with an open kitchen and rooftop bar overlooking Lam Son Square and the City Theatre.

And the “heart” of the restaurant, located on the ground floor alongside the kitchen, is the custom-designed pizza oven, built by Naples-based ovenmaker Stefano Ferrara. This oven is also one of the highlights of 'NAMO: it is wood-fired, burns at 450 degrees Celsius, and takes just 60 seconds to cook a pizza.
