In 2010, Thierry came to Ho Chi Minh City and embarked on a remarkable culinary business with his wife, Tina Trang Pham. Renowned French chef Sakal Phoeung founded Le Corto in 2016. With over 15 years of experience working in numerous 5-star hotels and as the president of Les Disciples D'escoffier Vietnam, Sakal Phoeung is known as a masterful "maestro" in food pairing.

Sakal maintains traditional cooking methods using basic ingredients and spices, but he adapts them to suit the local environment. While retaining the characteristic French flavors in his dishes, the chef uses local spices such as pennywort or purslane to garnish the food. This skillful and ingenious combination further enhances the flavors and increases the fusion of French and Vietnamese cuisine.
