French Luxury Food Seminar

At the French Consulate General's Palace, there will be a seminar on French luxury foods, followed immediately by a buffet hosted by the Commanderie des vins de Bordeaux (Bordeaux Wine Trade Union).

The conference will be moderated by Vincent Marcilhac, PhD in luxury products and gastronomic geography. He will discuss gastronomy from a cultural perspective. The president and founder of the GeoFood association, the speaker is also a visiting lecturer at the Faculty of Gastronomy, Cergy-Pontoise University, which is collaborating with Hutech University in Ho Chi Minh City to offer bachelor's degrees in culinary arts and restaurant management. There will be many discussions on French luxury foods, culinary arts and gastronomy.

Author of numerous books and other publications, Mr. Marcilhac wants to demonstrate that luxury food remains a high-end industry that generates wealth and jobs in France and that brings together all the professions from “farm to table”. Indeed, gastronomy requires a broad knowledge and understanding of agriculture, artisanal and industrial processing, as well as distribution and especially restaurants.

Why has a dominant luxury food culture developed in France, and not elsewhere? How can we explain its global influence and appeal? The conference will attempt to identify the factors that explain what at first seems obvious: the French uniqueness in the luxury food sector.

The future of the industry will also be discussed. The luxury food industry is currently facing many challenges arising from the expansion of the market, the industrialization of production and the diversification of the distribution cycle. In this context, how to cope with new competition and the transformation of society towards the internationalization of current consumption?

The Saigon branch of the Chamber of Commerce will celebrate its 1st anniversary on May 18, 2017, and on that occasion will organize a themed dinner every month in the form of a « vertical wine tasting » (same wines but different ages) or a « horizontal wine tasting » (different Bordeaux wines but the same age).
