Seminar on French luxury food

A seminar on French luxury food will be held at the French Consulate General, followed by a buffet hosted by the Commanderie des vins de Bordeaux (Bordeaux Wine Association).

The seminar will be led by Dr. Vincent Marcilhac, specializing in luxury goods and culinary geography. He will address cuisine from a cultural perspective. The president and founder of the GeoFood association, this speaker is also a visiting lecturer at the Culinary Arts Department of Cergy-Pontoise University, which is currently collaborating with Hutech University in Ho Chi Minh City to offer bachelor's degrees in culinary arts and restaurant management. This event will feature numerous presentations on French luxury food, the art of cooking, and culinary culture.

As the author of numerous books and other publications, Marcilhac aims to demonstrate that luxury food remains a high-end industry generating wealth and employment in France, encompassing all professions from "farm to table." Indeed, gastronomy requires a broad knowledge and understanding of agriculture, artisanal and industrial processing, as well as distribution and, especially, the restaurant industry.

Why has France, and not elsewhere, gradually developed such an overwhelming culture of luxury food? How can its influence and appeal be explained globally? This conference will attempt to offer explanations for something that initially seems obvious: the French uniqueness in the realm of luxury food.

The future of this industry will also be discussed. The luxury food industry is currently facing numerous challenges arising from market expansion, related to the industrialization of production and diversification of distribution channels. In this context, how can it cope with new competition and societal changes driven by the current internationalization of consumption?

The Saigon branch of the Chamber of Commerce will celebrate its first anniversary on May 18, 2017, and on that occasion will host a themed dinner party each month in the form of a "vertical wine tasting" (same wine but different ages) or a "horizontal wine tasting" (different Bordeaux wines but the same age).
