In particular, you might be surprised to see many dishes served on a layer of translucent white parchment paper. Not only does this odorless parchment paper absorb excess oil from fried dishes, but it also helps keep ingredients fresh longer (in salads), prevents food from coming into direct contact with the charcoal fire (in grilled dishes), and prevents bacteria from entering through the ice cubes (in salads)... It's safe to say that if you already believe that seafood is one of the least contaminated and toxic foods, you can now believe it again: every dish at La Cod aims for the "cleanest possible" standard.

 

 

 

If you want to enjoy La Cod's signature dish, you can start with the Seaweed and Red Crab Roe Salad, featuring fresh seaweed meticulously prepared in ice water, red crab roe and crab meat for added protein, and sesame sauce for added richness and aroma. Even more unique is the Devilfish with Black Pepper Sauce, herbs, and various potatoes, served with buttered rice. This fish, with its white, firm flesh, becomes even more flavorful and nutritious when grilled in black pepper sauce, making it very healthy.

 

 

Grilled lobster with coffee sauce and stir-fried vegetables is another unique twist. Fresh lobster is cut in half and grilled in parchment paper with coffee sauce over high heat. The parchment paper prevents the lobster meat from drying out, avoids direct contact with charcoal or the stove, and enhances its flavor as it absorbs the coffee sauce. Add to that a French-style seafood hot pot with a broth simmered for two hours from a mixture of seafood, combined with saffron and coriander for an irresistible aroma. The richness and sophisticated combination of seafood, along with the color and distinctive flavor of French cuisine, are perfectly suited to Vietnamese palates.
