After import, the beef is meticulously marinated in a special sauce developed and prepared by Calibre's experienced head chef. Furthermore, what sets this restaurant apart is that the beef is grilled on hot stones. These stones, sourced from volcanic regions, have high heat resistance. The hot stones are placed in an oven for 4 hours at 400°C before being used to grill the beef at the customer's table. As a country with a developed livestock industry, the United States has a long history of raising large herds of cattle for milk and meat on vast grasslands, providing an abundant food source for its people.
With a 24-month cattle rearing process, after about 15 to 16 months, the cattle are free-ranged to graze, and then for at least 4 months they are brought back to be "nourished" with high-quality roughage such as ground grains.
