Spring culinary delights at The Reverie Saigon

27/02/2018

Considered one of Southeast Asia's most unique restaurants, Café Cardinal serves all day, offering a sophisticated dining experience with stunning panoramic views of the city center from above. The menu is primarily inspired by classic French cuisine, with a unique blend of European and Asian influences, perfect for spring celebrations.

This March and April, diners at Café Cardinal restaurant at The Reverie Saigon hotel will have the opportunity to enjoy a wide variety of the world's finest oysters. From fresh, delicious oysters from Vietnam to those from faraway countries like France, Ireland, and Canada, each variety boasts exquisite flavors.

Muirgen oysters, harvested in Ireland and France, are favored by connoisseurs for their sweet, beige flesh within a shimmering, mother-of-pearl shell. Meanwhile, Bayness Sound oysters from Canada offer a delicate, sweet flavor and firm flesh, perfect for first-time oysters. And of course, there are two famous Vietnamese oyster varieties: Fine de Claire oysters from Nha Trang and Pacific oysters from Ha Long Bay.

In addition to fresh oysters served on ice, Café Cardinal also offers popular hot oyster dishes such as Rockefeller (grilled oysters with parsley, fried onions, and breadcrumbs), Mornay (baked oysters with béchamel sauce, Gruyere cheese, and white pepper), or Fabrice (steamed oysters with chopped tomatoes, capers, and olives).
