Abalone stew with fish maw

With high nutritional content, abalone and fish maw are among the expensive ingredients and must undergo a very elaborate processing. Chicken stock must be prepared 24 hours before being used to soften the abalone, while fish maw is stewed with ginger and wine to create an attractive aroma. After serving the abalone and fish maw, the chef will add mushrooms, cauliflower, cherry tomatoes and pour on a special sauce to create a unique flavor combination.
