Braised abalone with fish maw
With their high nutritional value, abalone and fish maw are among the most expensive ingredients and require an extremely elaborate preparation process. Chicken broth must be prepared 24 hours in advance to tenderize the abalone, while the fish maw is simmered with ginger and wine to enhance its enticing aroma. After plating the abalone and fish maw, the chef adds mushrooms, cauliflower, cherry tomatoes, and drizzles them with a special sauce to create a unique flavor combination.
