The cuisine of the Four Seasons The Nam Hai, Hoi An resort has always been a reason for visitors to come back again. Every year, every season, Four Seasons The Nam Hai, Hoi An always brings a completely new experience. It can be a special menu with local ingredients and gifts that only appear seasonally, a culinary theme inspired by another country, or more spectacularly, a seamless experience from cuisine to culture during festivals such as Christmas and New Year.
But from the end of 2023, the culinary world at Four Seasons The Nam Hai, Hoi An will not only stop at seasonal experiences, but also undergo a comprehensive change with new chefs, expansion and innovation of the resort's restaurant system.
For the first time, Four Seasons The Nam Hai, Hoi An will launch a Japanese grill restaurant called Nayuu, helmed by Chef Alex Moranda. Originally from Spain, Alex is steeped in Japanese culture. His culinary journey spans continents, from honing his skills in Seychelles, Panama and Germany, to taking over Four Seasons The Nam Hai, Hoi An’s new Japanese restaurant. He is a culinary artist and perfectionist, whose dedication to the smallest details is evident because “every meal is an opportunity to create new memories with loved ones”.
Lotus Leaf Restaurant – one of the familiar names at Four Seasons The Nam Hai, Hoi An, will also have a spectacular rebirth under the direction of new chef, Thomas Remy. Still an elegant space with meals by the pool, but the dishes of Lotus Leaf will now be a seamless blend of French culinary sophistication and Vietnamese soul. The French-Indochinese influence on each dish echoes the story of ancient trade routes, royal banquets and culinary heritage from the golden age of old.
The flavors of familiar Vietnamese dishes at La Sen restaurant will now be elevated with the combination of French culinary quintessence.
A new addition to the Four Seasons The Nam Hai, Hoi An team is Saif Siddiqui, Director of Food and Beverage. An experienced chef who has worked for Four Seasons from Mumbai to the Maldives, Saif will bring his undying passion to Cafe Nam Hai, reimagining it as a fine Indian restaurant. His curiosity and love for diverse cultures and cuisines promises to transform the dining experience at Cafe Nam Hai into a journey of discovery of India’s culinary heritage.
The upgrade of Cafe Nam Hai restaurant is the resort's response to the enthusiastic love of visitors for Indian food in recent times.
