But from the end of 2023 onwards, the culinary world at Four Seasons The Nam Hai, Hoi An will not only offer seasonal experiences, but will also undergo a complete transformation with new chefs, expansion, and renovation of the resort's restaurant system.
For the first time, Four Seasons The Nam Hai, Hoi An will launch a Japanese grill restaurant called Nayuu, led by Chef Alex Moranda. Originally from Spain, Alex's soul is nurtured by Japanese culture. His culinary journey spans continents, from honing his skills in Seychelles, Panama, and Germany, to taking over Four Seasons The Nam Hai, Hoi An's new Japanese restaurant. He is a culinary artist and a perfectionist, his dedication evident in every detail because "every meal is an opportunity to create a new memory with loved ones."
Lá Sen Restaurant – a familiar name at Four Seasons The Nam Hai, Hoi An – will also have a spectacular rebirth under the direction of new chef, Thomas Remy. Still maintaining its elegant setting with poolside dining, Lá Sen's dishes will now be a seamless blend of refined French cuisine and the soul of Vietnam. The French-Indochinese influences in each dish resonate with stories of ancient trade routes, royal banquets, and culinary heritage from a bygone golden age.

A seasoned chef who has worked for Four Seasons from Mumbai to the Maldives, Mr. Saif will continue to bring his boundless passion to Cafe Nam Hai and reshape it into a high-end Indian restaurant.
