Grilled chicken with mắc khén spice from the Northwest region.

Mắc khén is a woody plant that grows naturally in abundance in the forests of Northwest Vietnam. The tree flowers in spring and bears fruit in summer. The mắc khén fruit is dark brown, with glossy black seeds, and has a slightly pungent, spicy taste.

The seeds have a distinctive aroma characteristic of mountain spices. Grilled chicken with mắc khén is a very famous dish of the Thai people in the Northwest region.

Grilled chicken with mắc khén spice has golden skin, fragrant meat, a sweet taste, and a strong aroma of mắc khén, lemongrass, ginger, and chili. When preparing it, choose a good quality chicken, clean it, and then grill it.

Regarding grilling technique, choose charcoal that retains heat well and doesn't get too hot, and avoid adding extra fat to the chicken as in conventional grilling. Grill slowly and gently. While grilling, allow the chicken fat to render naturally so that the skin and meat stick together.

When grilling, remember to only brush the chicken with the mắc khén spice mixture after it's cooked through and firm. When exposed to heat, the mắc khén releases its fragrant aroma.
