Ocean Crab Cake

Lotus Tea Smoked Salmon
Born and raised in Montreal, Canada, where there is a large Jewish community, the head chef of Don's Tay Ho restaurant, Donald Berger, wants to introduce his favorite dish that he has been making for the past 13 years and is becoming very popular in Hanoi: Bagels and Lox.
Salmon is an exceptionally healthy food. Perhaps most importantly, omega 3 acids help smooth skin and are good for the heart, maintain brain health, reduce the risk of skin cancer… No one can resist the alluring aroma of a fragrant salmon fillet.
At Don's Tay Ho, the dish "Smoked salmon with lotus tea" is made three times a week when Norwegian salmon arrives in Hanoi. Knowing about lotus tea by chance while looking for ingredients to smoke salmon, Mr. Donald Berger did not expect this combination to create such a wonderful dish. Under his talented hands, the head chef of Don's Tay Ho has created the dish "Smoked salmon with lotus tea" which is extremely attractive and easy to enjoy.
The salmon is deboned as soon as it gets off the plane to preserve the freshness of the fish. Then marinate it with 1 kg of Phu Quoc sea salt, 500g of pure brown sugar and 500g of refined white sugar, and leave it overnight. The next morning, the fish is taken out, washed, and then dried in a cold dryer on an airy rack and placed on two large trays. One is turned upside down and placed on the other to alternate for the best smoking effect. Take aluminum foil and place two spoonfuls of lotus tea on the open burner rack, turn on the fire until the tea begins to smolder. This process is done within 1 hour.
