NAMO Tuscan Grill: Tuscan culinary inspiration in Saigon

For many, Tuscany is the epitome of Italian cuisine. Built on fundamental principles – stemming from the finest local ingredients, chefs cooking with passion and simplicity – Tuscan kitchens have the ability to showcase the richness of nature through their food.

The Val D'Orcia hills south of Siena are home to olive trees, wild herbs, wild boar, rabbits, cattle, and deer. Specialty Italian pasta dishes are also wonderfully adapted to accompany dishes such as hot stews or special sauces. Beans, fresh fruit, and truffles are grown abundantly on local farms. Chef Ivan Barone – who lived in Tuscany for over 10 years – felt this was the moment to introduce Saigon diners to the vibrant cuisine that was intertwined with his Italian childhood.

Ivan was exposed to Tuscan cuisine from a young age. He learned how to roll local pasta from the elders, explored the distinctive flavors of the Val D'Orcia mountains, and later opened a renowned restaurant in the region. From his childhood memories to the rich flavors of typical Italian dishes, all have become inspiration for Ivan's creation of the unique menu at 'NAMO Tuscan Grill.

The delicate texture of hand-pulled pappardelle pasta, the piping hot wild boar meat, or the famous charcoal-grilled bistecca fiorentina – all the dishes at our new restaurant will offer the most distinctive flavors and an unforgettable experience.

Most of the ingredients are grown in the wild, so they all have DOP certification.Denominazione di Origine Protetta(roughly translated as original source/origin). This means that dishes made from these ingredients will guarantee absolute quality. Most of these excellent ingredients will be used in the menu at 'NAMO.
