The World's 50 Best Restaurants awards, considered the Oscars of the fine dining world, were postponed last year due to the pandemic. This year, the award organizers held a ceremony to announce the Top 50 at the Flanders Convention Center, Antwerp, Belgium on October 5.
Accordingly, the US and Spain are the two countries with the most restaurants on the 2021 award list (6 restaurants), of which Spain has 2 restaurants in the Top 10; Italy has 4 restaurants; Denmark and Peru, each country has 2 restaurants and are in the Top 10. And for the first time, a city dominates the top two positions in the ranking, which are Noma and Geranium restaurants in Copenhagen, Denmark.

The three-Michelin-starred restaurant Noma, founded and run by chef René Redzepi in Copenhagen, Denmark, has been at the top of the list for the fifth time since 2010 (it was named "Best Restaurant in the World" in 2010, 2011, 2012 and 2014).

Noma’s reputation is a testament to Chef Redzepi’s talent. He and his team use seasonal ingredients that are hard to come by. The menu is strictly seasonal. Seafood in winter. Vegetables in summer. Game-style menus in the fall. All dishes are made from local ingredients. However, the creativity and complexity of each dish has earned Noma a high reputation for quality.

Many other award categories
In addition to the Top 50, The World's Best Restaurants 2021 also scores high-end restaurants from 26 countries around the world. Candidates for this award do not distinguish between continents or culinary styles or restaurant architecture. Of which, 8 restaurants are on the list for the first time.
Lido 84, located on the Gardone Riviera in Italy, won the "Highest New Entry" award. It also ranked 15th out of 50 on the list of the world's 50 best restaurants. Boragó, located in Santiago, Chile, received the "Flor de Caña Sustainable Restaurant Award," which honors sustainability in the food and beverage industry.

Nominee from Vienna, Austria - Steirereck - won the "Gin Mare Art of Hospitality Award".
The "Estrella Damm Chefs' Choice Award" is based on the highest number of votes from chefs. The winner is Spanish chef Victor Arguinzoniz of Asador Etxebarri restaurant in Atxondo, a municipality in the province of Biscay, Spain.
Chef Will Goldfarb of Room 4 Dessert in Bali, Indonesia, took home the World's Best Pastry Chef award, which is given to the best chef specializing in desserts. The Chairman in Hong Kong received the Highest Climber Award, which honors restaurants that performed exceptionally well in 2021.

In addition, Odette (Singapore) is ranked 8th in the world's Top 50 and was named the best restaurant in Asia. Chef Julien Royer and his team combine the art and sophistication of the dishes in a cozy, luxurious and elegant space.
The only Vietnamese restaurant in Asia's top 50
In the "Asia's 50 Best Restaurants 2021" award, there is a name from Vietnam. That is Anan Saigon - the restaurant ranked 39/50 among the world's most notable fine dining places. Located in the historic food market at 89 Ton That Dam, District 1, the restaurant marked the first time since 2013 that a Vietnamese restaurant made it to this prestigious list.

The restaurant of the famous chef Peter Cuong Franklin not only has a beautiful space and good service, but is also famous for its innovative variations of traditional dishes. After the 100 USD banh mi that once made waves on social networks, Anan Saigon continued to launch Pot au Pho, a mix of Vietnamese pho and French-style beef stew pot au feu. With such a special culinary style, it is not surprising that Peter Cuong Franklin's Anan Saigon won the 39th position on its first appearance in the Top 50.


Female chefs honored
Many female chefs have also won awards. For example, Peruvian Pía Léon holds the "Best Restaurant in South America" award for her restaurant Central and was also named "World's Best Female Chef." French-born Dominique Crenn, co-owner and chef of San Francisco's Atelier Crenn, won the "Icon Award."
