Special dishes on the menuà la carteChef Joseph's creations are inspired by fascinating Korean folklore. His foie gras parfait with assorted herbs from the Korean mountains – Liver Parfait with Assorted Namul Muchim – is based on the story of the Rabbit's Liver. His stuffed persimmon with creamy halibut tartar and citrus – Stuffed Persimmon with Creamy Halibut Tartar and Citrus – is inspired by the folk tale of the Tiger and the Persimmon. His lobster and seaweed soup – Velvety Lobster on Gondrae Jook & Paprika Leathers – is based on the story of the Fairy and the Woodcutter. And that story also inspired Joseph's creation of his Wagyu beef with gochujang chili sauce and crispy fried sweet potatoes – Gochujang Glazed Wagyu Beef & Paprika Crisps…
