The time from ordering to serving food here is just 13.5 seconds, something that almost everyone who has dined here finds incredibly impressive. This is also why Karne Garibaldi has held the Guinness World Record for the fastest food service in the world since 1996.
Although the traditional Mexican dishes on the restaurant's menu require hours of slow cooking, meaning they must be prepared and cooked in advance, plating the food and bringing it from the kitchen to the diner's table in less than 15 seconds still demands a high degree of speed and coordination.
After customers have chosen their dishes, the food is served to them in about 15 seconds.
"Initially, it was like a game among the servers to see who could bring the food to each table the fastest. Then, that very game motivated us to try to set a Guinness record," said Daniel Flores, manager of the largest of Karne Garibaldi's six branches.
However, this doesn't stop there, even after being recognized by the Guinness World Records. 26 years later, the servers at Karne Garibaldi are still proud to be the fastest servers in the world, sometimes bringing dishes to diners' tables 13.5 seconds early, or, for some special dishes, the slowest serving time is under 1 minute.
Although the traditional Mexican dishes on the restaurant's menu all require hours of slow cooking, meaning they must be prepared and cooked in advance, this implies that they are ready and prepared beforehand.
According to Laura Mariaud, manager of Karne Garibaldi, “Beyond speed, Karne Garibaldi places great emphasis on food quality and the service attitude of all staff. Of course, we train our staff to work efficiently, but there is a process behind food preparation that allows the workflow to be quick. This is how we have transformed our service into a production chain to maintain our reputation to this day.”
The most famous dish at Karne Garibaldi is carne en su jugo, a regional specialty originating from Guadalajara and the state of Jalisco. It's also the only main course on the menu. Since Karne Garibaldi opened in 1970, this dish has been prepared using a family recipe passed down through generations, resulting in a flavor that is almost as authentic as in Mexico. It's served in clay dishes made by artisans in the Tonala district of the city. Carne en su jugo is essentially a soup with succulent beef slices and crispy fried bacon, served with homemade cornbread.

To keep things quick but not chaotic, staff are trained to communicate using hand signals, while a green light next to the kitchen flashes whenever an order is ready. New employees start work behind the bar or washing dishes until they are ready to serve. Beyond Guadalajara, Karne Garibaldi plans to open more franchise locations throughout Mexico, followed by the US, Canada, and Europe.
