Now, after 30 years of perseverance and accumulating experience in Cantonese cuisine, he has established his name and is honored to take on the position of head chef at the prestigious Ngan Dinh Hanoi restaurant in the Hanoi Daewoo Hotel.
With his talent and deep understanding of traditional Cantonese cuisine, Chef Gary IP has skillfully adapted and innovated to offer diners dishes that not only retain the authentic Cantonese flavors but are also elevated to a new level with sophisticated presentation.

As a chef specializing in Cantonese cuisine, he regularly researches and follows Chinese restaurants. Making his debut as head chef at Ngan Dinh Hanoi, IP Koon Hong shared: “I’ve noticed that Chinese cuisine is currently very popular in Vietnam, but Hanoi doesn’t have many restaurants offering authentic Cantonese flavors. I hope I can introduce the unique culinary culture of my homeland and make Ngan Dinh Hanoi a top destination for lovers of Chinese cuisine in general and Cantonese dishes in particular.”

To mark his new role, Head Chef IP Koon Hong has launched a premium menu featuring nearly 100 dishes, showcasing the pinnacle of culinary art in terms of aroma, color, and flavor, distilling the finest elements of Cantonese cuisine to create a truly memorable culinary journey.

The Cantonese-style feast will begin gently with the Jellyfish and Papaya Salad with Shrimp and Pork, followed by the refreshing taste of Thousand-Layer Tofu with Goat's Belly Mushroom Sauce, Peking Duck with its crispy skin, and flavorful broths made from nutritious ingredients such as abalone, sea cucumber, and shark fin.

The highlight of the fine dining menu lies in eight exquisite dishes conceived and prepared by Head Chef IP Koon Hong, representing the perfection of Chinese cuisine, such as Shark Fin Soup, Fish Maw in Coconut Milk, Fried Rice, Australian Abalone (3 heads) in Oyster Sauce, and Steamed Fresh Crab Claws in Egg White.
In addition, creative desserts such as Black Sesame Coconut Milk Cake with Gold Leaf and Peach Mango Mochi will provide a sweet aftertaste, the perfect ending to a delightful culinary journey at Ngan Dinh Hanoi.
