A very "adventurous" vegetarian corner in the heart of Hanoi
Hidden on the second floor of the Complex 01 art complex, lane 167 Tay Son, Hanoi, Ms. Phieu's vegetarian stall is one of the inspirational destinations that combines the spirit of rustic vegan cuisine, artistic space and a bit of "wandering spirit" as the name suggests.
Vegetarianism is increasingly becoming a lifestyle for many people, especially young people. Vegetarian restaurants are appearing more and more to serve the needs of diners. In addition to the quality factor, the space and cooking methods at many vegetarian restaurants today also receive the attention and response of many tourists.

Lost in Ms. Phieu's vegetarian world in the heart of the city
Nguyen Khanh Huyen Linh, manager of Ms. Phieu's vegetarian stall, shared with Travellive: "The restaurant opened in December 2024 with the same project as the vegetarian restaurant on Chau Long Street, in the context of vegetarianism becoming more and more popular among young people and those who care about health, the environment, and the spirit of green living. We do not want to create a regular vegetarian destination, but aim for a close, familiar space like the old street stalls imbued with Vietnamese culture, but breathe into it a creative spirit and a bit of 'adventure' as the name suggests. The image of 'Ms. Phieu' represents a girl who dares to go, dares to try, always adventuring to new lands, just like the way we experiment with vegetarian cuisine and art space at this creative complex."
A full-flavored vegetarian menu, nibbling on vegetarian spring rolls also creates a special taste.
Small stall of handmade vegetarian dishes
In the middle of the old factory recycling complex, where art exhibitions, creative studios and modern coffee shops intersect, Ms. Phieu's vegetarian stall appears rustic with wooden tables and chairs, rough brick walls and simple green potted plants. The vegetarian stall reminds us of the stalls in the old market, where sellers not only exchange goods but also share daily stories.
Enjoy the full flavor of the vegetarian world

Bun rieu "made without rieu" and bun tron are two dishes that many diners love thanks to the ingenuity in recreating the flavor. The broth is made from tomatoes, mushrooms, tofu and vegetables to create a natural sweetness, mixed with a characteristic light sourness. Although there is no crab rieu like the traditional version, the "fake rieu" made from beans is skillfully prepared, eaten with raw vegetables, fried tofu and fresh noodles, still making people feel the full flavor.
Meanwhile, vegetarian vermicelli salad scores points thanks to the harmonious combination of ingredients such as mushrooms, beans, fresh vegetables, cashews and flavorful homemade sauce. Without being fussy, this dish conquers diners with its fresh, light but nutritious feeling, very suitable for the fast-paced life of modern young people. In particular, each bowl of vermicelli salad at Ms. Phieu is like an impromptu combination, which can be changed slightly according to the season or the inspiration of the chef, creating a "floating" character that is true to the spirit of the restaurant.

Mushroom porridge is also a choice worth trying because it is light and fragrant, easy to eat, especially suitable for the days when Hanoi changes wind. Vegetarian pho is served with broth made from vegetables so it has a sweet taste, the toppings are a few slices of vegetarian beef, vegetarian ham, bean sprouts, crispy fried dough sticks... The simplicity but sophistication of the dish makes it the top choice for those who want to enjoy familiar flavors while still maintaining a healthy vegetarian lifestyle.
Snacks are also quite diverse, from dried mushrooms to spring rolls, vegetarian salads, all of which are popular with diners. Spring rolls are one of the dishes that many diners say they must try when coming here. The main ingredients are vegetables, mushrooms mixed with rice powder... rolled tightly by hand, dipped in a sweet and sour sauce. The restaurant also has a refreshment stall with drinks such as: matcha sugarcane, matcha nut milk, wild tamarind, wild peach or even a pot of old green tea... all are hand-made, no chemical sugar, creating a clean and healthy feeling.
The price is affordable so diners can freely "eat to their heart's content", satisfy their culinary passion and fully enjoy the flavors of the vegetarian world.

The interesting thing about Ms. Phieu's vegetarian stall is that each dish is served in an old-fashioned ceramic bowl, evoking a sense of familiarity - a deliberate choice, to encourage diners to "eat slowly, chew thoroughly" and fully enjoy the flavor. One of the unique features of this vegetarian restaurant is that after ordering, customers will serve and clean up after themselves - a simple way but helps customers feel more connected to the space and food.
The stall is not simply a restaurant. Sometimes, it is a connecting space where young people who love vegetarian cuisine, green and sustainable living come together to share, learn and spread positive values. Therefore, many diners come here not only to “eat their fill” but also to “recharge their batteries”, or simply sit still amidst the quiet music, the fragrant smell of stir-fried mushrooms and the natural yellow light from the outside.
Amidst the hustle and bustle of the city, Ms. Phieu's vegetarian stall offers a gentle stop, an experience that not only "fills" the stomach but also soothes the soul. A small restaurant, but can instill in you a very different feeling: light, slow and wholesome.
