Nguyen Khanh Huyen Linh, manager at Co Phieu vegetarian stall, shared with Travellive: "The stall opened in December 2024 as part of a project with vegetarian stalls on Chau Long Street, in the context of vegetarianism becoming increasingly popular among young people and those interested in health, the environment, and a green lifestyle. We didn't want to create a typical vegetarian dining destination, but rather a space that is intimate and familiar, like the traditional street stalls steeped in Vietnamese culture, but infused with a creative spirit and a touch of 'adventure,' just like the name suggests. The image of 'Co Phieu' represents a girl who dares to travel, dares to try, and is always venturing to new lands, just like how we experiment in vegetarian cuisine and artistic spaces at this creative complex."
