Beef stir-fry is typically prepared and enjoyed directly on a hot cast-iron pan.
Beef stir-fry (Bò né) is a particularly familiar dish in Central and Southern Vietnam. Unlike steak, beef stir-fry is usually made from thinner slices of marinated beef, placed in a hot cast-iron pan along with a fried egg, french fries, pâté, onions, herbs, and served with bread. Diners can add chili sauce, salad, tomatoes, and cucumbers to their liking.

Bun bo Hue (Hue-style beef noodle soup) is traditionally eaten for breakfast and has gradually become popular throughout Vietnam. The broth is simmered from beef or pork bones, with added lemongrass, shrimp paste, and annatto oil. Bun bo Hue is characterized by its thick, round, chewy, and smooth noodles, served with beef brisket, beef meatballs, beef sausage, blood pudding, and optionally pork trotters. Vietnamese noodle soups generally include fresh vegetables and herbs. The dish has a rich, balanced flavor of sour, spicy, salty, and sweet, with a distinctive fish sauce aroma.
Rice rolls
Banh cuon (steamed rice rolls) is a popular and affordable Vietnamese dish. The wrapper is made from rice flour, thinly spread, and steamed. The filling usually consists of minced pork mixed with chopped wood ear mushrooms, or sometimes it's plain. The dish is served with sweet and sour fish sauce, and may be accompanied by Vietnamese sausage, grilled meat, and various herbs and spices.

To make sweet and sour fish sauce for dipping rice rolls, the basic ingredients needed are filtered water, lemon juice or vinegar, sugar, and good quality fish sauce. Then add chili peppers, pickled vegetables such as thinly sliced mango and carrots, and other ingredients according to your preference to enhance the flavor of the sauce. This dipping sauce can also be used with savory pancakes, steamed dumplings, and other fried savory pastries.
