Previously, the all-day breakfast menu included dishes such as omelets, the masterpiece Eggs Benedict, and English Breakfast. Building on that foundation, L'Usine continues to cater to the needs of young people who value a "clean" lifestyle and prioritize aesthetics with its newly launched menu based on the criteria of nutrition, deliciousness, and visual appeal.
Breakfast isn't limited to traditional, familiar dishes; L'Usine believes young people can freely enjoy a variety of European and Asian dishes, both savory and sweet, according to their individual tastes and preferences. Nutritious and wholesome ingredients such as salmon, avocado, kale, chia seeds, quinoa, strawberries, and, most importantly, fresh flowers… are incorporated into this new menu. Not only suitable for breakfast, this menu is also an ideal choice for any time of day: as a dessert after a meal or a light snack on a hot afternoon.
Waffles
With his extensive experience, Chef Nicholas has continuously researched to create innovative dishes that also suit Vietnamese tastes. In just a few months, Nicholas quickly created many distinctive culinary creations. Not stopping at breakfast dishes, he also challenged himself with Asian-inspired dishes such as chicken rice, grilled pork vermicelli, and grilled pork sandwiches… with the hope that everyone who comes to L'Usine can find a dish they like.
Salmon pie
If you have a sweet tooth, you definitely can't miss the Brioche French Toast – served with mulberry jam, truffle honey, and whipped cream. If you prefer something balanced and light, try the Avocado Toast – served with a runny poached egg, homemade pesto sauce, edamame beans, feta cheese, and quinoa on rye bread. And finally, the signature dish on this menu is the Hot Cake: a thick-crust pancake – served with nuts, strawberries, and vanilla ice cream.

Not limited to just European dishes, L'Usine expands its customer choices by launching dishes inspired by local cuisine such as chicken rice, grilled pork vermicelli, and grilled pork sandwiches. "The secret to the perfect chicken rice is the dipping sauce, and this is what I've put so much heart into," Chef Nicholas shared.
When dining at L'Usine, guests are sure to be impressed by the creative and innovative flavors that Chef Nicholas brings to the table.
Besides the presentation, the focus of this menu is on clean and nutritious ingredients. All the bread used in the menu is made entirely by L'Usine's kitchen team to ensure it meets all nutritional, quality, and cleanliness requirements. Chef Nicholas even built a small garden on the rooftop of L'Usine Le Thanh Ton – where he grows, cares for, and harvests herbs such as coriander and basil to use in his dishes. He believes that producing ingredients himself strengthens the bond between the chef and their creation.
