Previously, the all-day breakfast menu included dishes such as omelettes, masterpieces like eggs Benedict, or English Breakfast. Based on that foundation, L'Usine continues to meet the needs of a "clean" lifestyle and focuses on form and aesthetics of young people with a newly launched menu based on the criteria: nutrition, deliciousness, and beauty.

Breakfast is not limited to familiar traditional dishes, but L'Usine believes that young people can freely enjoy a variety of European and Asian, salty and sweet dishes depending on each person's taste and preference. Nutritious and healthy ingredients such as salmon, avocado, kale, chia seeds, quinoa, strawberries, and most especially fresh flowers... are used in this new menu. Not only suitable for breakfast, this menu is an ideal choice for any time of the day: dessert after a meal or a snack in the hot afternoon.

With his extensive experience, Chef Nicholas has constantly researched to create creative dishes, but at the same time, they must suit Vietnamese tastes. In just a few months, Nicholas has quickly created many unique culinary products. Not only stopping at breakfast dishes, he also challenged himself with Asian-style dishes such as chicken rice, grilled pork noodles, grilled pork sandwiches... with the hope that everyone coming to L'Usine can find a satisfactory choice for themselves.

If you have a sweet tooth, you definitely cannot miss the Brioche French Toast – served with mulberry jam, truffle honey, and whipped cream. If you like balance and lightness, try the Avocado Toast – served with melted poached eggs, homemade pesto sauce, edamame beans, feta cheese, quinoa on rye bread. And finally, the signature dish that cannot be missed on this menu is the Hot Cake: thick-bottomed pancakes – served with nuts, berries, and vanilla ice cream.

Not limited to European dishes, L'Usine expands its customer choices by introducing dishes inspired by local cuisine such as chicken rice, grilled pork noodles and grilled pork sandwiches. "The secret to perfect chicken rice is the dipping sauce, and this is also something that I put a lot of effort into," Chef Nicholas shared.
When enjoying Vietnamese cuisine at L'Usine, diners will surely be impressed by the creative flavors that Chef Nicholas brings.
Besides the presentation, clean and nutritious ingredients are the focus of this menu. All breads used in the menu are completely made by L'Usine's kitchen team to ensure that they meet the nutritional, quality and cleanliness requirements. Chef Nicholas also built a small garden on the rooftop of L'Usine Le Thanh Ton - where he grows, cares for and harvests herbs such as coriander, basil... to use in his own dishes. He believes that producing the ingredients himself will help strengthen the harmony between the chef and their "brainchild".
