Lion City's Fine Dining experience begins with a pomelo salad and sweet, fresh crab meat called Yum Som O. These two familiar ingredients create a surprising culinary experience thanks to the fragrant passion fruit dressing and its perfect balance of sweet and sour, leaving a surprisingly delightful aftertaste that is both familiar and unique. The salad is accompanied by a glass of white wine to warm the palate. Next is abalone soup with shiitake mushrooms and Thai lime leaves. The soup is light and refreshing, and the Thai lime leaves add a distinctive touch to this traditional dish.
What's even more special is the extensive main course menu. You can choose from crayfish salad, grilled Hida beef fillet served with wine, or snow crab with Chef Iron's special sauce. For the crayfish salad, the crayfish are filleted and blanched, then mixed with a sweet, sour, and slightly spicy sauce with lemongrass and Thai lime leaves. The special sauce cooks the crayfish with spices, creating a sweet yet tender texture, unlike fully cooked crayfish which can be tough.
The meal concluded with a strawberry dessert. The chef skillfully removed the pulp from the strawberries and replaced it with strawberry jelly, served with a cocktail and sweet rosé wine.
