The restaurant's interior is simply decorated, creating a friendly and welcoming atmosphere, reminiscent of the eateries frequented by the characters in the stories. The menu is also unique, featuring ramen, udon, and other Japanese dishes, adapted to local tastes while retaining their rich and distinctive flavors.
Mr. Hoang, owner of Konoha noodle shop, shared: “I learned many recipes from Japanese chefs, but when adapting them in Vietnam, I need to adjust them to suit Vietnamese tastes. For example, with noodle dishes, I can reduce the saltiness and richness to better suit local customers. The presentation of the food is also very important – I try to maintain a minimalist style but still add a little creativity so that they find it novel and appealing.”

The owner always strives to preserve the traditional flavors in every dish served at his restaurant. He believes that the core value of cuisine lies in authentic taste and the subtlety of each ingredient, independent of fleeting trends or fads. For Mr. Hoang, chasing trends may provide temporary appeal, but it cannot create lasting appeal. Therefore, each dish at the restaurant is prepared according to the original recipe, retaining the distinctive flavor that he has painstakingly researched and preserved. Mr. Hoang hopes that every customer who visits the restaurant will feel a connection to traditional values, providing a profound and memorable experience.

To elaborate on his beginnings, Hoang initially studied accounting, but later had the opportunity to work in a kitchen and gradually discovered a special passion for the job. Like many in the profession, he also harbored the dream of opening his own restaurant. Throughout that journey, Hoang learned a great deal from those who came before him. Initially, he experimented with online sales to get acquainted with customers, and then gradually decided to open Konoha noodle restaurant. The restaurant has now been operating for two years.

Mr. Hoang said that the main target audience of the restaurant is people who love Japan, including both Vietnamese and foreign customers. These diners not only want to enjoy the food but also seek a space that can give them a feeling of closeness to the culture of the Land of the Rising Sun. The restaurant is designed in a compact and cozy style, which not only helps save costs but also gives customers an authentic feeling of the space. He added: “I wanted to create a place where customers can feel the Japanese style from the moment they step inside. From the arrangement of tables and chairs, lighting to decorations, everything is carefully chosen and arranged to create a comfortable feeling.” He believes that the compact size of the restaurant fosters interaction between staff and customers, enhancing the positive experience.
The ramen bowl is named after the character Naruto, the name of the original manga that the restaurant is inspired by.
Currently, many noodle shops offer prices significantly lower than the average, creating considerable competition. Mr. Hoang explains that his shop cannot offer such low prices because the cost of ingredients to ensure flavor and quality is already quite high. For him, each bowl of noodles is not just a dish, but a commitment to quality, from fresh ingredients to careful preparation. He wants his customers to feel the value and dedication in each dish, rather than focusing solely on price.
In the future, Mr. Hoang also plans to expand his business. However, he wants to focus on stabilizing his current restaurant, especially in terms of staff and facilities, before considering opening more branches. "I want to ensure that the restaurant consistently maintains the quality of service and the taste of the food before thinking about expansion. Once everything is stable, I will consider opening more branches in other areas," Mr. Hoang said.
