Chef Thomas has over two decades of experience working at world-class restaurants, hotels, and resorts such as the Hyatt Regency, Outrigger & Ohana, Metropolitan Club, Crowner Plaza, Barbette Restaurant, and Luncheon Club.

To enrich his culinary experience, Chef Thomas decided to begin his gastronomic journey in Vietnam – a country he has come to love, from its culture and people to its distinctive Asian flavors. Thomas aims to offer a completely new approach, a sophisticated culinary innovation, and the experience he has gained from 10 years working with leading restaurant and hotel brands including Banyan Tree, Six Senses Resort, Imperial Hotel, and Viet Thai International Joint Stock Company (the company that owns Highland Coffee, Hard Rock Café, and Armani Café).

Sharing his thoughts on his new role, Chef Thomas said: “I am honored to be part of the amazing culinary team at Flamingo Dai Lai Resort, and I am incredibly excited about the opportunity to create and launch enticing menus featuring flavors from five continents.” In the future, with Chef Thomas's collaboration, Flamingo Dai Lai Resort is sure to offer guests wonderful culinary experiences.
