Chef Franco was given a strange yet familiar name by Saigon diners - Fairy Chef - because of his elegance and care for each dish and diner, as well as the miracles he creates in each of his works.

With a creative palate, Franco will bring interesting experiences to diners through delicate flavors and carefully selected menus, along with special premium ingredients such as rare and expensive black truffles. To prepare a unique menu, Chef Franco personally brought black truffles from the beautiful land of Italy to Saigon diners.

About Chef Franco Palandra

Chef Franco has over 20 years of experience teaching at Tuscookcany and working as a catering consultant for a number of high-end clients including hotels, restaurants and cafes. His culinary roots are informed by the rustic traditions of Caserta cuisine. His culinary experience began in England, where he was Executive Chef at the Cunard Line Italian restaurant. He then took on the role of Chef de Cuisine at the renowned Logge Vasari.
