With a treasure trove of over 3,000 dishes as affirmed by many researchers, it has long been waiting to fulfill the role of the saying "food first" to accompany life not only for Vietnamese people but also for people around the world.
The Vietnam Culinary Culture Association has launched the project “Building and developing Vietnamese culinary culture into a national brand, period 2022 - 2024”. The project has received the support and main sponsorship of Masan Consumer Goods Joint Stock Company and co-sponsorship of Vietravel Airlines.
Delicious Vietnamese dishes introduced to the world
Accordingly, the project will be developed over 3 years. In 2022, it is expected to collect data on 300 typical Vietnamese dishes and select 100 local specialties, recognized by the Professional Council of the Vietnam Culinary Culture Association, and at the same time refer to community assessments through press and social media channels. The end of phase 1 is the Festival of 100 Vietnamese specialties to be held in Ho Chi Minh City at the end of 2022, expected to gather artisans from 63 provinces and cities nationwide.
In 2023, a database of 1,000 culinary dishes will be collected and developed into a collection of Vietnamese culinary data. Select typical, unique dishes with high popularity in each region to build a startup economic model with VCCA experts, creating a premise for the young generation and potential investors at home and abroad, bringing Vietnamese cuisine to develop further on the world culinary map.
In the period of 2024, convert the digital database into a Vietnamese Cuisine Map and aim to build a Vietnamese Cuisine Museum in the direction of 3D virtual reality and a real Cuisine Museum to serve tourists if there is interest from provinces, cities and future investors.
The Vietnam Culinary Culture Association will screen culinary teams for small and medium-sized enterprises that want to approach the startup model.
Through the project, it helps bring economic benefits to businesses and provinces; manufacturers participating in the industry of supplying raw materials, food, culinary processing, developing local tourism; creating strong motivation, promoting culinary businesses, raw material supply chains in the culinary industry, towards improving product quality, cultural values, contributing to diversifying and increasing the competitiveness of culinary products.
From the collected research database, the Vietnam Culinary Culture Association will screen the culinary set that can be packaged into a culinary startup model for members and small and medium enterprises that want to approach the startup model.
In addition, the project contributes to promoting and introducing Vietnam's regional specialties to domestic and international people, and promoting tourism through regional culinary culture, with core criteria: regional cultural heritage, delicious, healthy, unique. Suitable for market demand and orientation of culinary culture development to domestic and foreign tourists.
