The Northwest mountains are cloudy, the mountain roads are not very wide, the road surface is also rough, the hairpin bends are sharp, but Chef Hungazit's steering on the New Generation Ford Territory is still smooth as if going into the heart of the road, hard to complain about. Market in the mountains
From Muong Hoa to Ta Phin, you will pass O Quy Ho Pass, and you will see the truly stirring Northwest scenery. The clouds are thick and not pure white but pale pepper-colored, as if covering the surrounding mountain peaks. At the end of the pass, you will see Highway 4D, the concrete roads have just been renewed, and there is a market for the local people.
Before, there were often a few temporary markets where the Mong and Dao ethnic groups brought their goods to sell, but now it is more carefully planned, and is less chaotic. The vendors are arranged neatly in a safe area, avoiding the bends of large vehicles. All the goods are displayed like a sumptuous feast waiting for diners to stop and visit. Life and people here are a bit simple, now there is even less complexity. Three members of the Amazing Tour 7 group had the opportunity to stop at such a market.

Here, there are endless products, some found in the city, but also some delicacies that are hard to find. Chef Hungazit happily chose a wild bamboo shoot dish. He said this dish would be delicious grilled at night, with a slightly bitter but sweet aftertaste, and with pork it would be less greasy.
When coming to Sa Pa, you must try salmon, a freshwater fish that is difficult to raise, in the upstream water, but is extremely delicious. The members went to Ta Phin, visited the highest salmon farm, located at the head of the stream. Before, when it was not yet developed, every time there was a storm, all the fish were swept away, but now there is a fence, the economy is much more developed. The fish here are not like the salmon we usually eat, but are called Rainbow Trout, not the common Salmon.
So the last ingredients are all there, ready for dinner.
A fun party
A party that is held within four walls lacks the joy of Sa Pa, of the Northwest. One must go to the outdoor area of Tus de Liab, the highest restaurant in Sa Pa, to see the endless view of the mountains and sky, the vastness of the distant tree ranges. This is something that the locals are familiar with, but when visitors from far away see it, their hearts are filled with joy. So, the tour group decided to organize an outdoor party.
The atmosphere was so intimate, the diners felt like they were in a Northwestern family, solemnly lighting the stove in the middle, preparing for a special ceremony meal. In a little while, night would come, looking up at the sky, the stars seemed so close. Closer than when we stood on the city balcony and reached out, this was probably the occasion when each person got closest to the stars.
Chef Hungazit put a lot of effort into the outdoor party.
The first dishes were fish. Salmon was soaked in red wine, plum wine and salt, soaked continuously for two hours to get the delicious taste, then used as raw salad and soup. A cold dish and a hot dish brought a different experience like an adventure between two taste buds. The meat dishes were served next, with horse meat and pork both smoked. The taste of the meat cooked by smoking on a charcoal stove for a long time, leaving it for a long time without fear of burning, the longer it was left, the more delicious it was. All were marinated with mac khen, truly Northwest. The dishes were served with plum wine. Here, when the plum season comes, people can't eat it all, so they soak it in wine, both sweet and intoxicating.
