If the city skyline is a series of straight lines, then in Northwest Vietnam, the horizon is quite different, a bit chaotic, dotted with mountains, passes, and clouds like someone hastily sewing a coat in fear of the coming northeast wind. The Northwest mountains are shrouded in clouds, the mountain roads aren't very wide, the surface is rough, and the hairpin bends are sharp, but Chef Hungazit's driving in his new generation Ford Territory remains smooth and flawless. Today, he had the opportunity to showcase his skills alongside YouTuber Hoang Nam Challenge Me and Miss Tourism Vietnam 2022 Luong Ky Duyen at a highland market so he could cook a delicious feast in the evening.
Chef Hungazit and his companion, the new generation Ford Territory, conquer a challenging route in search of ingredients for a special dinner.
Mountain market
Traveling from Muong Hoa to Ta Phin, you'll pass through the O Quy Ho Pass, where you'll truly be captivated by the breathtaking scenery of Northwest Vietnam. Thick, dense clouds, not pure white but a pale, ash-colored hue, seem to be covering the surrounding mountain peaks. After crossing the pass, you'll find National Highway 4D, a newly constructed concrete road, where you'll find a local market.
Previously, this area was home to several makeshift markets where the Hmong and Dao ethnic groups brought their goods to sell. Now, it's more organized and less chaotic. The vendors are neatly arranged in a safe area, away from the curves of large vehicles. All the goods are displayed like a lavish feast, waiting for visitors to stop by. Life and people here are somewhat simple, and now even less complicated. Three members of the Amazing Tour 7 team had the opportunity to visit such a market.

The three members found the perfect ingredients for dinner.
Here, the produce is abundant; some can be found in the city, but there are also delicious items that are hard to come by. Chef Hungazit happily chose a dish of wild bamboo shoots. He said that this dish would be delicious grilled in the evening, with a slightly bitter but sweet aftertaste, and paired with pork, it would be much less greasy.
When in Sa Pa, you must try trout, a freshwater fish that is difficult to raise, especially in the headwaters, but it's incredibly delicious. The group then went to Ta Phin, visiting the highest trout farm located at the head of the stream. Previously, before development, the fish would be swept away by storms, but now, with the fence in place, the economy has improved significantly. The fish here are also different from the salmon we usually eat; they're called Rainbow Trout, not the more common Salmon.
So, the last ingredients are all there, ready for dinner.
A fun party
A party held within four walls lacks the true joy of Sa Pa, of the Northwest region. It's essential to go to the outdoor area of Tus de Liab, the highest restaurant in Sa Pa, to gaze out at the endless mountain scenery and vast, sprawling forests in the distance. It's something the locals are familiar with, but for visitors from afar, the sight alone fills their hearts with excitement and joy. Therefore, the tour group decided to hold an outdoor party.
The atmosphere was so intimate; diners felt as if they were in a family from the Northwest region, solemnly lighting a fire in the center, preparing for a special celebratory meal. As evening approached, looking up at the sky, the stars seemed incredibly close. Closer than when you stand on a city balcony and reach out; this was surely the occasion when each person felt closest to the stars.
Chef Hungazit put a lot of effort into the outdoor party.
The first dishes are fish. Salmon is marinated in red wine, plum wine, and salt for two hours to fully develop its flavor, then used in a salad or soup. A combination of cold and hot dishes offers a distinct culinary experience, like an adventure between two extremes. Meat dishes follow, including smoked horse and pork. The meat is cooked through by prolonged charcoal smoking, ensuring it doesn't burn and becomes even tastier with time. All dishes are seasoned with authentic Northwestern Vietnamese mắc khén (a type of spice). The dishes are paired with plum wine. Here, when plums are in season and abundant, people often have more than enough to eat, so they soak them in wine, creating a sweet and intoxicating flavor.
Youtuber Hoang Nam Challenge Me shared: "I enjoyed the party like a symphony. Chef Hungazit took me from one surprise to another. Everything felt like a work of art performed with sight, taste, hearing, and even touch. It was an unforgettable experience." Thank you, Chef Hungazit, for such a wonderful party.
