Join culinary artists to honor the flavors of traditional Southern cakes in the middle of Saigon

On January 13, 2024, food lovers in Saigon had the opportunity to enjoy many traditional Southern Vietnamese cakes, recreated by famous local artisans from the West through the "Western Cakes" culinary discussion and experience, with a "folk cake party" from banh tam bi (rice vermicelli cake), banh it tran (transparent rice cake), salty banh duc (rice cake) to banana steamed with coconut milk, five-color banh bo (rice cake with bamboo roots), banh con duong (worm cake)... uniquely handcrafted.

The story of the ancient Vietnamese sticky rice culture through traditional cakes is told by culinary artists Bui Thi Suong, Culinary Expert Chiem Thanh Long... In particular, many delicious and beautiful country cakes will be recreated by talented local artists famous in Tay Do: Mrs. Truong Thi Chieu and her husband, also affectionately known as Uncle and Aunt Chin Chieu. The program takes place within the framework of a series of events honoring the culinary culture "Homeland Flavor" hosted by Man Moi Restaurant.

With more than 300 kinds of cakes and sweet sticky rice, the South is a “paradise of cakes”. Among them, the number of traditional cakes originating from the Mekong Delta is the largest. With the geographical feature of being the rice granary of the whole country, since the time of land reclamation until now, people in the West have made many kinds of rich flour, creating the premise for many delicious cakes. For example, Sa Dec flour has been famous for a long time and is now present in most markets around the world.

The vibrant colors of the cakes are also the colors of the plants in their gardens, from purple from purple leaves, yellow from gardenia, green from pandan leaves, gotu kola leaves... The way of making molds and wrapping cakes also uses coconut leaves, banana leaves, bamboo leaves, jackfruit leaves... to make banh it, banh tet, banh u, coconut cakes... The processing methods are also diverse from steaming, boiling, baking, frying to fermenting the dough.
