The festival is an opportunity to introduce the uniqueness and distinctiveness of some of Hue's special vegetarian cuisine products; to honor the true value of artisans, chefs, groups and those who are dedicated to the sustainable development of culinary culture, especially vegetarian cuisine.

Taking place from May 17 to 19, 2019 at Hai Ba Trung Park, Le Loi Street, Hue City. Hue Food Festival 2019 will have the participation of about 40 booths including food booths and booths introducing vegetarian food products from branded hotels and pagodas belonging to the Vietnam Buddhist Sangha of Thua Thien Hue province.

In addition, the festival also had the participation of booths of a number of pagodas and businesses from Hanoi, Da Nang, Ho Chi Minh City, Quang Nam and a number of businesses from Savanakhet province (Laos), Muc Da Han province (Thailand) and Taiwan (China).
The festival also has a number of activities such as: Lantern Festival, voting for 10 vegetarian dishes at the Hue Vegetarian Food Festival 2019 and especially the Discussion on Vegetarian Cuisine - Vegetarian Cuisine.
Some basic vegetarian diets:
- Veganism: people who follow this type of vegan diet follow a vegan diet that does not consume animal meat, seafood, or animal products such as eggs, milk, and honey.
- Raw veganism/Raw Diet: This diet excludes all foods of animal origin, and foods are not cooked at temperatures above 48°C. The philosophy of this type of eating stems from the notion that heating foods destroys nutrients and natural enzymes that help improve digestion and fight chronic disease.
- Fruitarianism is a subset of raw veganism; it is a diet consisting of approximately 75% fresh fruit and 25% nuts and seeds by weight.
- Lacto-vegetarianism: This is a vegetarian diet that does not use animal meat or eggs, but does use milk and milk products. Lacto-vegetarianism is very popular with many followers of Eastern religions such as Hinduism, Jainism, Buddhism and Sikhism.
- Ovo-lacto-vegetarianism/vegetarianism: According to this vegetarian diet, vegetarians do not consume any meat, but do use eggs, milk and milk products. Nowadays, green followers often apply this type of vegetarianism because it is a relatively easy diet to follow with adequate calcium and protein.
- Pescetarian: This type of vegetarian may include fish and seafood in addition to vegetarian foods such as milk, eggs, beans, vegetables, fruits, and grains. According to this school of thought, finding sustainable seafood sources is beneficial to the environment, and a vegetarian diet that includes fish and seafood will ensure a healthy amount of iron.
- Flexitarianism: Vegetarians who follow this way may not use animal meat for certain periods of time, at certain times, or reduce the amount of meat consumed in their daily diet for health purposes, or to support environmental protection movements.
