This event promotes cultural and culinary tourism, creating a series of rich and unique activities at the end of the year to attract international tourists to the city and serve domestic tourists as well as residents of Ho Chi Minh City. The Department of Tourism hopes to develop the festival into a cultural and tourism event that honors the culinary cultural values of Vietnam and other countries around the world; creating opportunities for cultural exchange between countries, contributing to promoting increasingly sustainable international friendship and cooperation.
This year's festival, with the theme"The art of multi-sensory cuisine"The opening ceremony will take place at 6:00 PM on December 15, 2016, with the expected participation of 150 booths and nearly 20 countries, featuring the following main activities:
1. Food preparation and serving demonstrations will be held at the stalls:The event will take place from 9:00 AM to 10:00 PM daily from December 15th, 2016 to December 18th, 2016. Participating units will showcase and introduce unique culinary cultures, specialties from their localities and countries, and offer delicious dishes to customers. A distinctive feature of this year's festival compared to previous years is that each booth area will feature performances and interactive activities with customers to increase the festival's appeal. The organizing committee will create a dedicated area for ""The culinary home of Ho Chi Minh City"This event showcases specialty dishes from the 24 districts of Ho Chi Minh City, aiming to honor unique culinary businesses in these localities.
The main food stalls will be divided into five areas, symbolizing the multi-sensory art of gastronomy: sight, smell, touch, taste, and hearing. Each area has its own unique characteristics in terms of enjoying different dishes, providing a perfect experience for visitors.
- The area for taste and smell: includes stalls showcasing cuisines with harmonious blends of flavors, stimulating the taste buds and creating a delightful culinary experience for diners, such as dishes from the Southwestern region of Vietnam, Indian cuisine, Thai cuisine, etc.
- Visual and auditory zone: includes stalls that emphasize the aesthetic appeal of cuisine, showcasing culinary art creations combined with music to create a harmonious blend of emotions, such as: Western European dishes (France, Italy), Japanese, Korean, Central Vietnamese dishes, and cuisine combined with street music from Spain, Brazil, etc.
- Tactile Zone: Units are encouraged to use different cooking methods to demonstrate and guide diners in preparing dishes such as: Vietnamese savory pancakes (banh xeo), Vietnamese spring rolls (banh cuon), Italian pizza, Chinese noodles, etc.
- The wine, tea, and coffee exhibition area introduces the public to famous brands and provides expert knowledge about wine, tea, and coffee.
2. Introduction to traditional culinary villages:The event will take place from 9:00 AM to 10:00 PM daily, starting from December 15th, 2016 to December 18th, 2016. This activity aims to honor and preserve the cultural heritage of traditional Vietnamese culinary villages. Artisans will be invited to perform and interact with visitors, teaching them about traditional dishes and providing comprehensive information about these traditional craft villages. The program is expected to include activities such as: making Southern-style banh xeo (Vietnamese savory pancake); demonstrating the art of tea making; and showcasing traditional crafts: betel quid making, sticky rice cooked in bamboo tubes, flour production, spring rolls, jams, tea, etc.
3. A program showcasing wines from various countries.The event will take place from December 15th to December 18th, 2016, in a dedicated wine booth area. The organizers will collaborate with wine distributors in the city and the City Wine Association to showcase and introduce various wines from different countries and proper wine storage methods.
4. Programme Vietnamese Coffee Convergence:The event took place from December 15th, 2016 to December 18th, 2016. The organizers collaborated with renowned Vietnamese coffee brands to develop detailed activities (introducing and sampling various types of coffee).
5. The competition row Outstanding and most loved:From December 15th, 2016 to December 18th, 2016.The organizers encourage participating units to design visually appealing booths based on themes to attract visitors' attention and showcase the culinary culture of the country or territory represented by the booth. Visitors will vote for the best booth via text message and online platforms.
6. Food and beverage area:From December 15th to December 18th, 2016, the food tasting area is arranged separately to create a private and comfortable space for guests. This area also provides a space for visitors to sample delicious and unique beers from around the world; and learn about the production processes of different beers from Germany, Belgium, the Czech Republic, and more.
7. Culinary art photography exhibition:The exhibition, held from December 15th to December 18th, 2016, showcased photographs and culinary artworks. Exhibition themes included:
- Area 1: Recreating the image of a traditional Vietnamese meal from ancient times.
- Area 2: emphasizes the unique harmony and balance of yin and yang in Vietnamese culinary culture.
- Area 3: Molecular gastronomy, the culinary art of the future.
- Area 4: Cuisine from 5 continents.
8. Five-Star Chef Festival:The event took place from 6:00 PM to 8:30 PM on December 17, 2016, with the participation of 20 five-star hotels and 2 high-end restaurants in the city. This year's Five-Star Chef Festival had the theme..."Season of Happiness" (Joyful Season)Each unit will showcase and introduce its unique culinary products to guests by arranging and displaying one table of desserts."sweet corner"With a wedding cake as the main theme, the program is organized to provide 5-star hotels and high-end restaurants with an opportunity to promote their brand and services, especially highlighting the important role of culinary culture in the services of 5-star hotels and high-end restaurants.
9. Networking activities with MasterChef Vietnam:From 10:00 AM to 11:30 AM on December 16, 2016, visitors will have the opportunity to interact and chat with Ngo Thanh Hoa, the winner of the 2013 Vietnam MasterChef competition.
In addition, each day of the event will feature programs designed to encourage interaction with visitors, such as:
- Korean Cooking Class: Taking place from 10:00 AM to 11:30 AM on December 15, 2016, the World Food Culture Research Institute (WFCC) will guide visitors in preparing kimchi and some traditional Korean dishes.
- Traditional dish contest from various countries(from 5:30 PM to 8:00 PM on December 16, 2016);
- Cocktail mixing demonstrations by top Vietnamese bartendersfrom 8:30 PM to 9:30 PM on December 16, 2016);
- Culinary demonstration from five continents(from December 16, 2016 to December 18, 2016).
The closing ceremony and awards presentation will take place from 6:00 PM to 7:30 PM on December 18, 2016, at the main stage area.
