After enjoying a delicious, hot breakfast at the floating Cai Rang market, the members of Amazing Tour 8 continued their visit to the Sau Hoai noodle factory located at 476 Lo Vong Cung Street, An Binh Ward, Ninh Kieu District, Can Tho City. With a three-generation tradition, Mr. Sau Hoai's family noodle factory is one of the places that produces and supplies special noodles in Can Tho.

To create something new, Mr. Sau Hoai "transformed" the traditional white rice noodles into "multicolored rice noodles" using natural colors from vegetables and plants. Orange from gac fruit, bluish-purple from butterfly pea flowers, green from pandan leaves, purple from perilla leaves, pink from beetroot... all contribute to making the rice noodles more visually appealing and attractive.
To make delicious rice noodles, the selection of rice and the preparation of the flour are crucial, requiring specific professional techniques. This is followed by soaking, washing, rinsing, grinding, pounding, stirring in water to extract the starch, rinsing, drying, and finally cutting the noodles into strands.

Today, even with the help of machinery, many stages still require the skillful hands of experienced craftsmen, especially the process of spreading and removing the noodles from the pot. It is this meticulousness in each stage of production that has brought prestige to the long-standing traditional noodle shop, Sáu Hoài.

At the Sáu Hoài noodle factory, the members of Amazing Tour 8 had the opportunity to experience and learn about the history of the noodle-making village, along with interesting stories surrounding these colorful products. What particularly delighted the group was being able to directly participate in some of the noodle-making processes.

Through this experience, watching firsthand the diligent noodle makers meticulously spreading each noodle sheet over a smoky fire, carefully handling each strand after cutting and drying, the members of Amazing Tour 8 felt the hard work but also the joy it brings, further deepening their love for this traditional craft.
