At Hoa Residence Eleven restaurant, diners will experience modern Cantonese cuisine, in a luxurious space inspired by ancient Beijing architecture - where beauty blends delicately with contemporary breath, highlighted by lacquer paintings, ink paintings, imbued with sophisticated Chinese features. The restaurant has two private dining rooms, suitable for intimate, private meetings. The dishes are prepared using selected ingredients from many neighboring agricultural regions, ensuring freshness and harmony.

Residence Eleven’s Chef Gary is a veteran chef from Hong Kong with over 30 years of experience in Chinese cuisine. Drawing on a generation of chefs who grew up in a traditional yet innovative background, Chef Gary pursues modern Chinese cuisine with restraint and refinement. Rather than breaking down the old structure, he chooses to recontextualize: keeping the core spirit of the dish, changing the technique, presentation and flavor structure to suit the contemporary sensibility. The journey began in the vibrant kitchens of China, where he nurtured his passion for reshaping Chinese cuisine.

Throughout his career, Chef Gary has continually pushed the boundaries of traditional Chinese cuisine, particularly Cantonese cuisine. Rather than chasing sophistication, he seeks a balance of flavour, texture and presentation, where unpretentious technique delivers a sense of complete enjoyment. Starting from familiar dishes, Chef Gary simplifies or restructures them with selected local ingredients, creating unique new versions. These creations not only refresh the taste experience but also open up a subtle dialogue of contemporary cuisine. Not only does he focus on the balance of flavours, he also skillfully exploits the depth of local ingredients, enriching the Cantonese culinary identity with inspired modern variations.




This July, Residence Eleven restaurant introduces a special menu inspired by Hong Kong cuisine, created by Chef Gary himself. The menu is a blend of sophisticated cooking techniques and personal touches, with outstanding dishes such as: Abalone soup, bird's nest soup with crab meat, Hong Kong-style steamed white cod, A5 Wagyu beef stir-fried with sweet potatoes, bird's nest stuffed with boneless chicken wings and many other special dishes. This is not just a meal, but a taste journey designed to bring a complete and memorable experience to diners.
