Instead of breaking down old structures, he chooses to re-confine them: preserving the core spirit of the dish, while adapting techniques, presentation, and flavor profiles to suit contemporary sensibilities. This July, Residence Eleven restaurant introduces a special menu inspired by Hong Kong cuisine, created by Head Chef Gary.
