Chef Gary, head of Residence Eleven, is a veteran chef from Hong Kong with over 30 years of experience in Chinese cuisine. Bearing the mark of a generation of chefs who grew up in tradition but are constantly innovating, Chef Gary pursues modern Chinese cuisine through restraint and refinement. Instead of breaking down old structures, he chooses to re-confine them: preserving the core spirit of the dish, while adapting techniques, presentation, and flavor profiles to suit contemporary sensibilities. This journey began in the vibrant kitchens of China, where he nurtured his passion for redefining Chinese cuisine.

This July, Residence Eleven restaurant introduces a special menu inspired by Hong Kong cuisine, created by Head Chef Gary. The menu blends refined cooking techniques with a personal touch, featuring signature dishes such as: Abalone stew, bird's nest soup with crab meat, Hong Kong-style steamed white cod, Wagyu A5 beef stir-fried with sweet potatoes, bird's nest stuffed boneless chicken wings, and many other exquisite options. This is more than just a meal; it's a culinary journey designed to provide a complete and memorable experience for diners.
